Ice Cream Truffles
- 1 small tub bubble gum ice cream
- 1 small tub peanut butter Ice cream
- 1 small tub lemon ice cream
- 1 small tub pralines & cream ice cream
- 1 box wooden sticks
- 1 cup Chocolate toffee bits
- 1 cup Shaved toasted coconut
- 1 cup Small chocolate chips
- 1 cup Rainbow sprinkles
- Mini chocolate peanut butter cups
- Line baking tray with parchment paper and place it in the freezer to
chill for ten minutes. Remove tray and scoop as many balls of each
flavour of ice cream as you desire. Work quickly at this stage to avoid
the ice cream melting.
- For the peanut butter ice cream: while scooping ice cream, tuck a mini peanut butter cup inside as a surprise.
- Once all your ice cream balls are scooped pierce each ball with the
popsicle stick and place the tray back in the freezer for 20 minutes.
- Place all desired toppings in bowls.
- Remove the ice cream truffles from the freezer and immediately start rolling them in the desired toppings.
Note: If the ice cream is too hard and the toppings are not sticking wait one to two minutes before rolling the truffles in the toppings to ensure that they stick. Serve immediately or place back in the freezer in a covered container and serve within two days.
